I remember those days.

There was restaurant just north of Fort Sill called The Plantation. It served steaks just as you mentioned, with the edges drooping off the sides of the plate. And with the side veggies on a separate plate.

*sigh*

Was that the place beyond the ranges, paneled in wood from ammunition crates, with a seismograph on the counter? Went there TDY a couple times, and visited Geronimo’s grave nearby.
