Babaganoush and “redneck caviar” from the cookbook along with fresh homemade salsa for the co-workers tomorrow.

Did Reine’s “ziplock omelet” recipe this morning as a test. Worked out fairly well as a concept, but I did something wrong and it came out slightly undercooked in the middle (water not quite at full boil, not in water long enough, or I needed to “spread” the mix in the baggie a bit better to increase the area of egg getting cooked efficiently. Was delicious in any case once I did a minute or so of pan cooking to finish it off.

Plan on passing that one on to my brother since he does field trips with undergraduate students and it looks like a good campground recipe.
