I was offered a job in Omaha. They flew me out, fed me corn fed stake, showed me some big boned women. I liked the airport, it reminded me of a bus depot.

I’m not a big believer in regionalism, nor do I subscribe to “Texas pride”. However, I have to say that “corn-fed cattle from Nebraska” is exactly the kind of thing at which snobbish Texan carnivores look down our noses. Monocle and all.

Grass-fed cattle weigh less (and are therefore less profitable) than corn-fed commodity cattle, but are healthier overall. Their resultant beef is less fatty, a bit firmer in texture (not to be confused with “toughness”), and much easier to cook to specification. And yes, you would notice the difference if presented with both side-by-side.

Disclaimer: while I am a ravenous carnivore, if required to participate directly in the slaughter and butchery of my food, I would very likely convert to veganism overnight. I’m intrinsically averse to killing animals, but some of them are very tasty. Make of that what you will.
