Michael Pollan writes a lot on food and points out that the lowest possible margin for food producers is from selling us healthy, wholesome & organic products that we prepare ourselves.

I am not sure why you are equating “organic” products with healthy products. There is zero nutritional gain to producing food organically. There may be some positive aspects to food production using techniques that are under the rubric of organic, but those positives are more in line with soil health sustainability and crop diversity.
