If that were a demonstration of free will, they would be able to play that piece the exact same way each time. I don't think that is how improvisation works.

No, quite the opposite. The free will keeps them from duplicating the tune. Not much rehearsal for this evening of music at the Half-Note. That is indeed how improvisation works, when done well.
