Fine. Explain to me how separate legal systems for various religious and secular demographics do not set up a “separate but equal” judicial system.

Arbitration laws by definition use a different set of criteria for conflict resolution than common courts. They require the consent of both parties to be binding, usually have a limited scope, and are not inherently discriminatory. Religious arbitration courts are “discriminatory”, but only in the same trivial sense in which you cannot participate in a bunch of Sacraments unless you are of Catholic faith.
