I look at it this way. Think long wrench and bolt. if you get some change at the bolt, no big influence. Apply some off angle at the hand end of the long wrench… Now you get trouble.

You have the idea of the changing parameter being length and then having more torque - and seeing a more pronounced behavior. However that is a linear response.

The point of bifurcations is that you start transitioning to non linear behavior.

Think about the Re example. Under almost all circumstances, honey has a very small Re. You have never seen turbulent honey most likely. Now think of air, or water, which since it has a much lower viscosity, can easily take on a very high Re. You have certainly seen pictures off all sorts of interesting turbulent floes in air.
