Okay, kind of a dumb question, but here goes:

If I’m cloning a partition doesn’t that mean I have to create a partition the same size as the existing one? IOW, would I have to create 1 partition the same size as the existing one (320GB), and then a 2nd one for the other 180GB?

Nope. You can resize the partition after the clone; many clone tools will let you resize a cloned partition directly into a smaller or larger disk, resizing the partition and filesystem automatically. It’s been a while since I’ve used Acronis, so I don’t know if it will do that.
