Usually it is cooked alone with garlic or ginger, or sometimes together with meat (pork here, but I know that’s not useful in your case). Cut the vegetable lengthwise, discarding any seeds, then slice thinly. Parboiling it before stirfrying will take out some of the bitterness. Then you can fry a little garlic and ginger in oil, add the bitter melon and cook till soft. Some sugar will compensate for the bitterness. You can find fancier recipes online.

Bitter melon/gourd is reputed to have health benefits for diabetes and cancer sufferers.

Is there any more-commonly known vegetable it can be compared to? Some kind of squash?
