Two Boots Pizza (pdf link) : the two boots are Louisiana and Italy natch. Crawfish, andouille, tasso, creole & cajun toppings— probably not as good as your place but I bet you’d still like it!
(their po’boys are crap tho IMO)

Yes, you did mention it once! I’ve got it saved in my “downloads”.

I see they use tasso.
Great stuff. Not a lot of folks use tasso outside of La, that I know of.
