Have you tried growing kohlrabi or Salsify before? They should do well in your cool climate and the local chefs might really like them. Neither are available in normal supermarkets.

I’ve tried kohlrabi before. It did okay. The thing is that here while we tend to have cool springs the summer can get really hot (95-100F) so longer growing cool weather plants can bolt when that happens.
