Costa Rica. I have heard a lot of good about it. Both Atlantic and Pacific coasts, plus mountains in between, well established tourism, environmental parks.

That’s a pleasant place. However, I have always wanted to go to Belize. Warm, beautiful beaches, English is the official language (British Honduras prior to independence) and plenty of sights. Lots of fascinating Mayan ruins as well. Seems like a great place to explore a tropical rain forest to me.
