Kenobi is a crazy old hermit in the desert. Of course he wears crazy old desert hermit clothes. Skywalker naturally wears, like, shirts and pants when he has stuff to do.

Fast forward backward to a time slightly longer ago and WE’RE ALL IN THE CAPITAL CITY OF THE WHOLE DAMNED GALAXY, AS A MAJOR PART OF THE SYSTEM OF GOVERNMENT, AND WE’RE ALL DRESSED LIKE CRAZY OLD DESERT HERMITS.

Priest vestments in the liturgical churches mirror roman fancy dress from 2000 years ago. For some reason, I find the Jedi outfits unsurprising.
