Get the loin chops at Costco. They’re good quality, and a few minutes on each side on a hot grill is all they need. Then get some plain yogurt and sambal oelek (chili garlic sauce - find it in the asian section of the market - green lidded jar). Mix a little of that with the yogurt and serve as a dipping sauce.

Oh, I know about the chops at Costco. The problem is my wife would not eat them. She doesn’t like lamb. Or venison, which cut short my brief time as a hunter. Not an ethical objection, she didn’t like the flavor.
