It’s really a whole host of things.

There’s our genetics, our genotype. Then there’s our environment interacting with the genotype to produce our phenotype. There’s likewise the phenotype of all our symbiotic organisms, all our bacterial flora that are necessary for our life and we’d die without. Then, beyond that genetic and structural component, there’s the societal influence and our own self-determination— though if you wanted to be fancy you could see that as just another pressure on the phenotype.
