I think that’s part of our problem. Animals used to be utilized from snout to tail. Innards, gizzards etc. We’ve become decadent and wasteful. I think that’s a serious cultural problem.

Animals were used, every bit.
Some of the best recipes developed from people doing what they could to make the yucky bits palatable.
