re: #87 Lord of the Pies
Today was Challah Day. First batch is in the oven. I will put up a picture when they are all done.
I have 2 chicken breasts here. Found this recipe in one of the cookbooks in my collection and I just happened to have all the ingredients* in the pantry:
1 small jar orange marmalade (10 oz)
2 Tbsp. honey
1 Tbsp extra virgin olive oil
1 Tbsp lemon juice
1 Tbsp lime juice
1 tsp. Dijon mustard
1/2 tsp. salt
1/4 tsp. ground pepper
3 cloves garlic, crushedMix together all the above ingredients and marinate the chicken breasts for 1 hour.
Preheat the oven to 425.
Peel and slice 1 onion, 1 potato, 1 sweet potato, and arrange on a foil baking pan. Place the chicken breasts on top. Pour the marinade sauce over it all.
Bake for 40 minutes.
*The recipe also called for 1 orange, sliced, arranged on the bottom of the pan, but I didn’t have an orange and so I used a sweet potato.
Also have some wild rice leftover, that should go well.
DON’T TRY THIS.
IT IS GAGGINGLY SWEET.
