Speaking as a former busser. Wait staff would kill for a good busser, and bend over backwards for a great busser. I would get something like 1 percent of their sales. Works out to about $30 or more a shift. On a real busy shift I could haul in $60. When there were more of us bussers, two patio’s and interior, I would make an extra $10-$15 from the wait staff as appreciation for helping out. The way it worked total break down was 1% of total sales to bussers, 1% to the bar staff, and 1% of total food sales to kitchen staff. So on average of $1,000 dollars of sales over a shift it would work out as a total of $30 per wait staff, out of a total at times of 8. Now that was in the summer during the patio season.
