I had the best soft shell crabs last night.

Mmmm. Crab veal.

I just got back from a store I rarely go to, where I found veal stock on the shelf. The same Kitchen Basics brand that provides chicken, vegetable and beef stock. But I’ve never seen veal stock before, anywhere. So I snagged a couple of quarts.

At the checkout, you would have though I had a couple quarts of meth, going by the glares from other customers. The clerk wasn’t exactly cheerful, either.

Pretty soon, when I want veal I’ll probably have to pull up to a corner in a bad neighborhood, give some guy with a cell phone my order and my cash, then drive across the street to take delivery.

And Michigan has extremely strict laws governing veal production, ensuring humane treatment. Around here, calves get treated as well as lamb - yet there’s piles of lamb on the shelves.

Oh, well. Maybe I’ll start making my own stock in the bathtub.
