really…is lamb a lean meat? I heard most people eat it almost raw with mint sauce…

Lamb is a red meat. Not very lean. Yes, rare lamb is most common, but I like mine med-rare because I like a nice seared and crispy crust. Mint sauce is so 1960’s housewife idea of cuisine. Stuff’s nasty - especially on such a delicate and flavorful meat like lambb.
