I grew up surrounded by old Jewish laides, so tongue was occasionally on the menu. It does have that texture too, and I don’t like it much.

Of course, my students sometimes try to gross me out by telling me about ‘lengua’, which for some reason they figure Anglos don’t eat and don’t know about. I disappoint them.

You aren’t supposed to eat the skin of the tongue. At least when I was inspecting meat departments in the 70’s the butchers would have tongue slow cooked and peel off the skin and just serve the inside. I have never had it since, though.
