That’s my issue. I’ve tried like three times on my old stove (gas) with varying results, and then a few times on Jimmah’s stove in scotland.

About that last, let me say: once the spousal visa comes through, the first major purchase is a new stove. Or ‘cooker’ as it is called there. Gas is of course mandatory. So is flame one can regulate.

AS blueheron points out, the pan can make a big difference. Cast iron and heavy aluminum will hold the heat longer and offer better temp stability.
