Going OT for a minute because I have to vent. I’ve been watching “Mind of a Chef” on Netflix. Mostly, it’s been enjoyable if a little boring. However, this episode I’m watching has a Low Country (as in South Carolina) chef traveling to West Africa to sample the taste profile where a lot of Low Country cooking originated. He manages to go through the whole fucking show without once mentioning that the only reason there were West Africans in the Low Country was because THEY WERE SLAVES!

A sample actual quote: “If you look back at the very beginning of Low Country Cuisine, it’s important to understand who was doing the cooking: It was the West Africans.”
