It cooks as evenly as cast iron, is practically nonstick w/out the nasty teflon stuff, lasts forever. Beware of imitations (like Martha Stewart’s). I toss mine in the dishwasher, and expect it will get passed down to my daughter in another hundred years or so.///
It’s one thing the French still do well.
