Oh yeah. We need a diner like that. Lots of empty spaces downtown. We have one place where the old farts gather for coffee, but it’s dark and not very nice. I’d want to do really good breakfasts with Biscuits and RedEye gravy, cinnamon rolls the size of hubcaps, etc.

Too costly for just old timers, though. You need to be able to attract crowds, at least at times, if you want to succeed. And that means you’re going to have to find a way to make breakfasts swiftly, because most people don’t have time to wait on weekdays. Save the leisurely items for the weekends, when people can take the time to enjoy them.
