OK. Question to the Lizards about something important. Food.

Will have limited cooking prep time this evening. Feeding three adults (the 4-year-old doesn’t really count since she never eats much of what is served regardless.) Nothing long cooking since I figure I have 60-90 min max for getting the whole meal together.

Trying to avoid chicken and turkey tonight since chicken was part of dinner last night and I had turkey for lunch. No corn allowed either.

The main items I have on hand:
Fish (frozen and breaded, so sort of :p on them)
Shrimp, large (24 count) (1 lb, frozen)
Potatoes (Russet, 5lb)
Various frozen vegetables; green beans, spinach, green peppers
Can fix rice or cracked buckwheat as a side fairly easily.
A fairly good spice cabinet and supporting items (flour, corn starch, etc.)

I can also hit a store on the way home for a few extra items (onions, etc.)

I can do a green beans dish and baked potatoes pretty easily. The shrimp could be something simple like a cocktail, or maybe do shrimp scampi and cook a little pasta or steam rice to go with it.
