Turkey soup! I did the same for Ts-giving turkey, but froze it and made soup twice. Put lots of carrots, celery and onion in it with noodles or rice and they very well might eat it. : )

Share your roasted potatoes recipe, please? I have rosemary and thyme plants. And a 10 lb bag of Idahos (some will be used for potato salad to go with the spiral ham).

Will do lots of carrot/onion/celery into the stock as well. Filler will probably be rice (steamed separately and added right before serving).

For the potatoes this will be a ad hoc experiment. Will quarter a few pounds of potatoes and put in a roasting pan with garlic cloves, chopped rosemary and thyme (like you I have plants), and then put in some butter or olive oil and some white wine. Then let cook with the turkey and then turn up heat to 400 and cook another 15 minutes maybe while the turkey cools a bit.
