Potatoes are great, especially if you want to save some money on your food budget. This is a great potato leek soup that I love. Made it for Jimmah last week and he approved.

Changes: use all chicken broth, no water, if you can. I make my own stock— buy a rotisserie chicken and when you’re done eating it make stock from the carcass. You could also use boullion and water in place of the water, but it bumps the sodium content up high.

We’re on a super-tight budget ourselves right now; potatoes are great. Killgore no doubt will have all kinds of better tips in re: cooking and food budget, but this is a nice simple recipe that doesn’t require you to have anything other than a pot and a vegetable peeler (and knife).

Killgore can make a pork chop last 1000 days! Just kidding, about 4-5 days with lots of vegetable. I can cook but since I’ve had an electric stove I lost interest. Plus I’m set in my ways pushing a close 50. If I cook it involves a pan and either ground beef or an Italian sausage and wheat bread. Garlic and onions optional. Or I’ll mix up a microwave burrito with a Budget Gourmet vegies and rice. Maybe add a tomato. Chips, granola bar or two and of course, ice cream.
