I don’t understand why service people are supposed to thank me when they provide me with food or whatever. I try to make a point of responding “No, thank you.”

Well, having worked in customer service for a few months, the reason why is because you’re thanking them for giving you business. Me, I agree more with your point of view, and they seem to appreciate it.
