I think chicken was conversely seen as more luxurious. Hoover’s 1928 slogan was a “Chicken in every pot.” Food is funny. It amuses me how caviar became the food of the wealthy elite.

The thing with chicken was that the initial investment wasn’t all that expensive but it takes time to grow from a chick to a hen, you need to keep your upcoming hen pullets to replace your older hens so all you had in a year was a couple of young roosters as friers and the oldest hens to make stew or soup from as they aged out and no longer laid enough eggs. Eggs were the reason for chickens until modern refrigeration made factory poultry farms possible and that “chicken in every pot” could be literally true. Meat was a side effect in the old days and a Sunday afternoon picnic with fried chicken was a special treat indeed!
