This continues to be a fantastic dish, so I have to share the recipe with the Lizards. Apologies on the measurements, this is how I cook.
Avocado slaw:
one ripe avocado (you’re going for well-mashed, here)
two spoons sour cream (I use low-fat/no fat)
lime juice (ummm. more than a little. less than a quarter cup.)
SALT (I am not a low sodium cook)
cumin
paprikacole slaw mix
Mash the avocado. Mix in sour cream. Add salt and lime juice to taste, adding a little cumin and paprika. I go for a nice salty-lime tang.
Mix in cole slaw.
Serve.
I could eat a whole bowl of this.
Hummmm…. I may just have to give that a try… sounds yummy.
