I’m wondering if this is what happens in an immunocompromised person or similar circumstances - if the body is able to attack the virus, but not quickly enough, the virus can out-mutate the body’s defenses until the body exhausts itself.

This is my theory as well. I’m hoping these kinds of constant mutation events are rare.
