I’ve got a Tub of stock. Please give me ways to use.

1:1 stock and water
2 large leeks sliced
1 lb potato, peeled & diced
2 carrots, sliced
2 stalks celery, sliced
Seasoning depends on your stock. I added no extra but I had plenty in the stock. The usual suspect herbs all work well.

Bring to boil then simmer at least 2 hours.
Traditionally just mash it up, I prefer to blend it. Put back in pot.

Melt 1 stick of butter into the soup
Add one cup heavy cream
Add 8 oz package fresh mushrooms
Parsley on top to taste.
Simmer 10 ~ 15 minutes.

Serve with good bread, sourdough prefered.
