The key to good Mac & Cheese is to bake it. Do the pasta, put it in a baking pan and mix in a slurry of eggs, heavy cream, and shredded sharp cheddar cheese. Stir well (it should quite soupy), and bake 45 minutes at 350º, covered, and then 15 minutes, uncovered.
I must have missed something somewhere. How would you make mac and cheese without baking it?
