Mornin’ all…we took the legs and thighs off the turkey we were cooking Sunday and set them aside…last night, we threw them in the crock pot with two cups of duck fat…turkey leg confit. Nine hours later, the house smells delicious…the cat is camped out next to the crock pot because of the lovely smell of confit. Of course, it’s not great for a diet, but we’ll let these things cool in the fat, then bag and freeze them for cold winter nights at the ski house.
