I meant more along the lines of preparation. The only way I’m really used to doing meat is on a grill.

I like to brown them up really good in a cast iron pan. But first I brown a bit of pork fat (bacon or lardons) Remove the pork and brown the birds. Remove the birds and brown mushrooms then add garlic and pearl onions. Deglaze with red wine, throw everything back in the pan, cover and stick in the oven till tender.
