Do what we do with the left overs. Put some aside for sandwiches and make Turkey Noodle Soup out of the rest. If it’s a ham, same thing except you make ham and bean soup. Both good on a cold winter day.
The carcass goes into the stock pot on Friday, and the leftover meat, plus a couple pounds of Andouille or Kielbasa, plus the stock, the Trinity, and a dark roux all become Gumbo on Saturday.
