BTW that “almond cream pie” was a partial failure. The “almond cream” filling instead of being creamy, came out like an almond-flavored slab of rubbery jello. Yecch. But once we removed the filling, chocolate brownie crust and whipped cream topping paired nicely so it wasn’t a complete disaster.
Preparing a creamy filling without using dairy ingredients is a challenge, it’s even more of a challenge if you want to bake vegan which I dabble occasionally.
