Smoker acts like an ice box. I’ve got an attachment burning alder chips on the side. Current temp inside is 77 and the fish is at 55. I turn the burner off periodically since it doesn’t need constant smoke for 12 hours. I’ll add ice every few hours as needed. Just need to keep the fish under 85-90. I like to keep it under 80 if I can. Warm day here…supposed to get up to 65…

Ah. Sounds like a good setup. I was thinking you were using the burner inside the smoker.
