Liver (and many other non-common) items are sold in many grocery store (chains) here in the south. Gizzards, pigs feet, etc. I think it’s a more regional thing, as back when I was in Boston tripe was sold in the meat dept’s, and Boston has a large Italian community which has several treipe recipes. Here, I don’t see tripe except in the butcher shop

In Los Angeles at the Carnercerias ( Mexican meat Markets) you can get just abount any cut of meat you want, but I wouldn’t eat liver ever again if you wrapped it up in 24K gold and Platinum and told me I could keep the metal if I’d eat the meats! Bleugh!!! I haven’t eaten liver since I was 6 years old and threw it back at my mom and got grounded for a month for wasting food.
