Get a bread machine. Worth the investment. I wore myself out trying to figure out why my bread didn’t look as good as the photos. Paid $4 for a thrift store bread machine, which I still have (even though it’s a 1996 model, Sunbeam did the digitals pretty well). Still do the final rise outside it, and bake in the oven, though because I like loaves, not blocks. Takes a lot of strain out of the process—like kneading.

You could also try artisan bread, which is just too damned easy. artisanbreadinfive.com

The artisan was my last attempt O_o

Part of the problem is that the rising never works right. Since my kitchen is always so cold, I put the dough in a bowl in the slightly warmed oven with a towel over it but it still never rises properly.

Perhaps the bread machine is the best way to go. Can you use them with regular flour & yeast or do you have to buy the mixes I see at the grocery?
