Nothing. If you’re a vegetarian, everything you eat is kosher. One rabbi I knew said that God wanted us to be vegetarians, but felt like he had to compromise with people’s natural desire for meat, so he created the laws of kashrut to minimize animal suffering and ensure that people are conscious of what they are doing when they eat meat.

Just don’t have blue cheese. Mold isn’t kosher.
And you need to very carefully wash all the vegetables to make sure no insects are on them, because insects aren’t kosher (except for a few specific species of locust, and those are only allowed for communities that have a tradition of eating them and can tell which ones are kosher).
