The problem is that Latinos aren’t playing along. To be counted as white, you have to do white people stuff: speak English all the time, be protestant, be racist against blacks. Latinos aren’t doing that stuff the way whites want.
I’d note that a significant minority of Latinos in the USA are not Catholic and have moved over to Evangelical and Pentecostal churches (mirroring similar shifts in Mexico, Central and South America). I don’t know if younger Latinos are mirroring their white counterparts and walking away from organized religion in general. But you get these weird combinations, like Marco Rubio attending a Charismatic church on Saturday night and Catholic mass on Sunday, or Jair Bolsonaro (the right-wing president of Brasil), who is Catholic but married to an Evangelical.
So yeah, not playing along in some ways, in other ways, following right behind.
