Not very well, but a longer slower cooking, perhaps in a pan on the grill above the coals…

On a Weber I use charcoal rails and put a drip pan in the center. Then I add some chunks of soaking wet apple wood to the coals, put the lid on and close down the top and bottom vents about half way.
