The Cliffs of Moher over on the west coast
Kilkenny Castle
Trinity University and do the Book of Kells tour
Waterford has a nifty city museum describing the history of the settlement and the Waterford Crystal Factory
I believe that the Jameson Distillery has a tour down in Cork
The Guinness Tour is also awesome

Our hotel is right by Trinity College, and oh I had totally forgotten about Waterford. Professional interest there. :)
