Also, the pork lard you can get isn’t the same as it used to be, because pigs aren’t fed a natural diet anymore. This reduces the ability of their fat to polymerize, which is essentially what seasoning is, polymerized fat.
It is in my neck of the woods (Southern California). Maybe because it isn’t labeled “Gluten Free.” Damned if they aren’t labeling everything this side of bleach “Gluten Free.”
