I’d agree that, prepared any other way, eggplant is not very appealing to me, but like most anything, it tastes pretty damn good fried.

I’m convinced that people who don’t like eggplant have just never had properly prepared eggplant. I don’t understand how someone could not like eggplant.

It is good fried.
But my mom made the very best baked eggplant casserole in the world.
And one of the local greek restaurants has excellent baked eggplant.
And all of the seafood restaurants serve some version of a seafood stuffed eggplant.
