If you don’t hate squash-like vegetables something to consider cooking is a stuffed pumpkin. Generally it’s hollowing out a small pumpkin (3lbs or so) and filling the cavity with baked stale bread (essentially croutons), cheese, garlic, and spices. Then adding a bit of heavy cream and baking it for a few hours. (My version is non-vegetarian and includes bacon.)
or acorn squash instead of a pumpkin.
Pumpkin soup, BTW, is particularly delish on cold days.
