OT for a moment to ask a question out of curiosity:
Seeing how it’s been so long since I’ve worked back home in the states and currently reside in a country where Sunday is essentially the same as Monday is in the rest of the world, how would most folks in US/Europe typically view receiving an email containing a CV and cover letter for a job sent on Sunday?

I would be a bit annoyed. Even though most of us check our emails 24/7, receiving a CV/cover letter on a Sunday is a good way to have it buried by the time Monday morning rolls around. I have a junior colleague who has an obsession with sending emails late on Friday night (after 7 pm)….likely thinking he is impressing people by working later on a Friday. Again, it’s annoying and a good way to be ignored.
