Broiling makes me nervous. As a cooking technique.

It comes from dealing with furnaces where the heat comes through an electric element at the top, and then having to reach in with metal tongs.

But yeah. I have issues with broiling.

My theory is that by the time you’re broiling you’ve already surrendered and something’s gone terribly wrong with your life, especially if you’re using an electric oven. The only time it’s really acceptable is if you’re on vacation in a strange hotel, there’s no grill available, the kitchenette is the hotel shitty kind and you forgot to pack the blowtorch.
